Who knew it came in pretty colors???!!!
I purchased both purple and orange cauliflower just to try it out and guess what?!?!
Purple cauliflower contains antioxidants from the anthocyanins group. And orange cauliflower contains 25 times the level of vitamin A than the white variety…SCORE!!
So what did I do with it? I mashed it of course. This time I sauteed some jalapenos and habaneros and added it to the mash. Amazing again.
I served it with a spinach and mushroom meatloaf. Recipe from Nom Nom Paleo. So good!! I made my meatloaf with a combo of grass fed beef and ground pork.
